DIRECTOR OF CATERING
EMBASSY SUITES MIAMI AIRPORT
CULINAIRE, a dynamic, privately-owned food and beverage management company headquartered in Texas, is seeking an enthusiastic, highly organized and self motivated team player to drive catering sales for the Embassy Suites Miami Airport hotel.
As Director of Catering you will report to the Food and Beverage Director and will be responsible for:
- Complete oversight of the busy catering department and one catering sales manager
- Development of new business through inside sales calls and solicitation of outside business
- Initiation and development of quality leads to ensure growth of catering sales
- Assuring the highest level of customer service in order to strive for flawless organization and execution of events
Our ideal candidate will have:
- Minimum of 3 years catering sales management experience in the local market
- Strong selling and interpersonal skills
- High level of creativity
- Excellent written and verbal communication skills
- Strong knowledge of food and current food and decor trends
- Excellent organizational skills and keen attention to detail
- Proficiency in Microsoft applications to include Word and Excel and must also have experience working with catering software

Job Requirements:
Responsible for soliciting new catering accounts, entertaining and maintaining relationships with existing accounts to meet and/or exceed food and beverage revenue goals. Oversee client functions to ensure customer satisfaction. The individual must possess the following knowledge, skills and abilities and be able to explain and demonstrate that he or she can perform the essential functions of the job, with or without reasonable accommodation, using some other combination of knowledge, skills, and abilities.
At least two year catering sales experience preferred.

As I write this letter, we are returning from the Annual NACE Educational Conference in Philadelphia. This year marked the 50th Anniversary of the NACE organization. Two new chapters were introduced at the conference for Omaha and Reno/Tahoe. The re-establishment of the New York Chapter was also announced. NACE is enjoying the highest national membership ever with over 4,300 members and our own South Florida Chapter is at its highest level in many years with over 100 members. Our chapter was well represented at the conference with 18 members registered, 4 of which sat for the CPCE certification exam.
An educational focus took center stage at the annual conference with breakout sessions covering every facet of the catering arena. The timing of the conference always works for South Floridians. It is scheduled in the summer and is extremely cost effective considering what it would cost to bring this level of training to hospitality professionals at the property level.
Keynote presentations by Walter Scheib, former White House Executive who served both President Clinton and W. Bush administrations and Mindy Weiss, Celebrity Wedding Planner from Beverly Hills, were both worth the price of admission on their own.
We are moving into the last half of the year’s events for our chapter. After quality functions at Hotel Victor, Harbor Beach Marriott, Gulf Stream Park and the Annual NACE Ladies Luncheon at Doral Golf Resort & Spa, we are looking forward to our final three events starting with September’s gathering at the American Orchid Society in Delray.
October’s event will be held at the Martini Bar in Miami and December will include the Hospitality Alliance Annual Fundraiser where NACE joins ISES, FAME, MPI, HSMAI, FBTA, SITE and GFLCVB to raise money for local charities.
In December, your board members will be gathering to work on next year’s calendar of events. We have all learned over the years that those who give most to the association tend to benefit the most. This is your organization and we welcome your input on program schedule and content. Any member interested in either hosting an event next year or working on the board is encouraged to contact myself or any board member.
